XOXO Adam Avery
Sui Generis is Avery's first production sour beer. They held a release party on 9/23/2009 at the brewery in Boulder.
I purchased my max allotment of 6 bottles for 48.00. This beer was six years in development and was blended from 10 different oak barrels, which all contained different beers and different yeast strains.
Avery specializes in making high gravity beers and Sui Generis is no exception. The lower the gravity the more sour the beer will be. Sui Generis, with its high gravity, is not only very sour but also very sweet due to the residual sugar.
I opened one of my bottles to share but unfortunately did not take specific notes. Suffice to say that this is an extraordinary beer and is a must purchase if you can find it. Available only at Avery and may be gone.
See my video on YouTube highlighting Adam Avery discussing Sui Generis, barrel aging and wild fermentation.
