This is an extraordinary beer. Adam and his barrel wrangler got together to make this beer. They tasted beer from all the barrels and decided to use several. A total of ten different beers from ten different barrels and fermentation processes went in to this beer.
They tasted and blended and finally came up with one of the best sour beers I have ever had. Very sour but also very sweet. Extraordinary balance. Continues below
There was sort of a mini-fest surrounding the release of this beer and Adam also talked about ten minutes about Sui Generis and barrel aging. I did open a bottle to share with friends but I didn't really write anything down as I was too busy talking.
