Bison Brewing has been brewing beer since 1989 and is now a USDA Certified Organic Brewery. All of the beers produced are organic. The Farmhouse Ale is a Saison-style ale.
This bottle conditioned ale is brewed with a mixture of malted barley and wheat and is fermented with Belgian yeast? When I poured the beer in to my glass I was quite amazed at the appearance. The color is a sparkling clear pale yellow and there is a lasting cream colored head. There are thousands of fine bubbles almost like champagne.
The initial aroma and flavor are of green apples, sour cherries, banana, orange peel and pepper. There is also a hint of sweat and horse blanket.
Some sourness and acidity is evident, though this is almost eliminated by the residual sugar. My thoughts after finishing the entire bottle is that this could be mistaken for a clear Wit.
The label suggests decanting into a wide mouth glass, leaving the dregs in the bottle, but to me the dregs are the best part. In this case the sweetness and mouthfeel improves and the Brett? aroma lessens. Overall very drinkable but too chewy and not sour enough to be really refreshing.
