This Off Flavors in beer Brief Guide for drinkers refers to all those defective flavors, aromas & looking characteristics can be shown in a beer.

My intention is to present a bird's eye view for those who enjoy beers just for fun while giving directions to improve their beer literacy. To all those interested in home brewing or evaluating beers in a professional way I will say "you'd better study much more, guys!"

Note: articles will be edited in flavor name alphabetical order. The number doesn't represent at all the importance of the defect. Ok, let's go!

Acetaldehyde is a non desired compound in beer.
If green apples are perceived in both mouth & nose, your beer is showing acetaldehyde presence. That means the process converting glucose into ethanol has not been correctly finished.
On the other hand, vinegar (acetic) or cider can also be shown in both flavors & aromas. It happens when ethanol oxidizes then intermediate compounds of the fermentation process result evidence.

Acetaldehyde is basically not appropriate. Even though in some American lagers it is acceptable at low levels. Examples of deliberate presence of acetaldehyde are Budweiser, Salvator (Paulaner Brou.) & Moska Poma.

Esta Guía breve de defectos para bebedores de cerveza se refiere a todos aquellos defectos en sabor, aromas y apariencia que puede presentar una cerveza. La intención es proporcionar una visión general para aquellos que tan sólo buscan saborear una cerveza; aunque, a la vez se dan directrices que permiten ampliar la cultura cervecera. Para todos los que esten interesados en elaboración casera o evaluación profesional, mi consejo : "¡estudiad más duro, colegas!". Nota: Los articulos están ordenados alfabeticamente por nombre del sabor. El número no representa en absoluto la importancia del defecto.Bueno, vamos a ello.

El acetildehido es un componente no deseado en la cerveza.
Si percibimos, tanto en boca como en nariz, manzanas verdes es señal que nuestra cerveza muestra la presencia de acetildehido.Significa que el proceso de conversión de la glucosa en etanol no ha finalizado correctamente.
Por otro lado, también pueden aparecer sabores y aromas acéticos (avinagrado) o de sidra. Sucede cuando el etanol se oxida y los componentes intermedios del proceso de fermentación se evidencian.
El acetildehido es, en general, no apropiado; sin embargo, en algunas Lagers Americanas es aceptable a niveles bajos. Ejemplos de cervezas con presencia deliberada del acetildehido son: Budweiser, Salvator y Moska Poma entre otros.
