Not many people can let a beer sit this long, but my cellar is quite large and I let most of the beers age for a while, especially the bottle-conditioned ones.
I have never tasted this beer before, even fresh.
This extraordinary beer pours a very deep opaque brown with a lasting rocky finely bubbled light brown head. There are also very fine bubbles in solution.
Molasses, tobacco and alcohol predominate the aroma. There is also just a hint of oak and cherry. The aroma is also very sweet and malty.
The flavor is a richly deep bitter-sweet chocolate that is balanced by a mild malt and hop bitterness. There is also a hint of blackberry, oak and sour cherries.
What Poseidon's Imperial stout beer tastes like fresh I can't imagine, but after seven years it is truly amazing. It would be really nice to be able to do a vertical of this beer.
