This Imperial Stout is one of the best beers on the menu at CBC in Las Vegas. Brewer Dave Pascual does a fantastic job with many of the beer selections brewed on site, and this one does not disappoint in the least.
Stout of Order has dark cherry and dark chocolate aromas combined with a roasted malt and coffee overtones are prevalent. There is a slight undertone of toffee or caramel with a mild bitterness from the hops as the beer warms. Some sweet undertones from the yeast, probably evident in the cherry / chocolate previously mentioned.
The beer's appearance is a clear dark brown / ebony color with no cloudiness. There is an opaque thin foamy head, which dissipates quickly and laces the glass as the beer is consumed. Once you get by the deep rich color, the flavor is of heavy roasted malt and mild coffee tastes with a slight chocolate and nutty aftertaste.
There is a mild bitterness and sweetness from the hops and yeast respectively and the aftertaste coats the palate and lingers for a few seconds. Also, the slight tannic or acidic flavors associated with the high alcohol content are evident.
This beer is smooth in texture with lots of body and a strong mouthfeel, moderate and refreshing with very little carbonation. The roasted malt flavor creates a film which coats the tongue and back of the throat, but that is expected from an Imperial Stout.
Overall, this is an excellent beer for its style best served after sitting for 10 minutes or so to warm up and release all of its aromas and flavors. One of the best Imperial Stouts brewed in the city by the local brewers. This beer is a truly robust and flavorful experience.
